El maguey (Agave americana) crece en Cocula, Jalisco, en el centro de la planta crece un tallo llamado quiote que después de florear lo cortan y lo cocen. En la epoca de semana santa se vende en rodajas en la plaza principal de Cocula. Su sabor es dulce y se prepara con sal y limón. Algo similar como las cañas.
