Lutefisk (lutfisk)
is a traditional
dish
of the
Nordic countries
made from
stockfish
(air-dried
whitefish
) and
soda lye
(
lut
). Its name literally means "
lye
fish
", owing to the fact that it is made with
caustic soda
or
potash
lye.
