The priory was built for a community of nuns from Bruges. It was Haywards Heath's first Roman Catholic church. A separate church (St Paul's) was established nearby in 1930. The nuns moved to Sayers Common in 1978, and the building was converted into a restaurant, offices and conference facilities.[3]
In August 2007, the priory was visited for an episode of Ramsay's Kitchen Nightmares, fronted by chef Gordon Ramsay, which aired in November 2007. The building was occupied at the time by The Priory Grill, a 100-seat restaurant owned by Scott Aitchison.[4][5] Aitchison, a former IT consultant, bought the building earlier in 2007 for £300,000 and started to lose around £5,000 a week. The restaurant closed in 2008, and later became a tapas restaurant.[citation needed] The building is now divided up into 43 flats.[6][7]
