The cited book, "Egyptian book of Genesis" is not a reliable source. It is a work of fiction written in the 20th century with no valid references and therefore should not be quoted.
The author Alfy claims to have heard those stories from some priest who claims that the stories have been passed down for 55 generations. That is not something to rely on historically. Moreover, the actual works of Manetho have been collected and studied academically for years and none of them corroborate the stories in that book and none of them contain the claim about koshary.
