Olestra is a fat. It's just that the intestines don't absorb it, which is why it wreaks so much havoc on your gut. It's a shame, because I'm from Bal'mer, and grew up with excellent potato chips from various German manufacturers (Utz, etc). Wow chips are the best-tasting potato chips I've ever eaten. The trick is not to overindulge. The food you're eating (such as a big sub) will buffer the olestra, just as big meal buffers alcoholic beverages.
