Convert to glossary?

Adding Heat, Removing Heat, Reducing Temperature Loss (accelerated),
edit- most techniques here are Adding Heat, others include:
- Removing Heat: "quickly putting food into an ice&water container to stop cooking
- Reducing Temperature Loss when Mass increases (accelerated): put food in boiling liquid, then add hot metal objects to bring back to boil very quickly
- Cooling: making ice cream, gelatin jelly,...
I do not remember the vocabulary used in the Julia Child videos
