Pepper steak is originally made of pork and not beef and part of Fujian cuisine, maybe the beef is a JC cuisine mod? 142.157.25.105 (talk) 05:20, 19 September 2008 (UTC)

Hmmm. I'm quite sure qīngjiāo ròusī is neither American-Chinese nor Japanese-Chinese but genuinely Fujian and made of pork as well as qīngjiāo niúròusī which is made of beef. 77.185.199.121 (talk) 17:51, 17 January 2009 (UTC)

Name change?

When one says "Pepper steak" in English most people usually think the big piece of beef flavoured with pepper and not the small shreds of beef stir-fried with green pepper strips. I'm not sure the name of this article is good, is a rename in order? Sjschen (talk) 21:53, 13 September 2008 (UTC)

I'm from the United States and definitely "pepper steak," since this recipe's introduction, means an Asian-derived dish of sauteed beef strips and green pepper strips. Steak with black pepper can be called various things (including steak au poivre), I guess including "pepper steak," but that's not the primary usage. Badagnani (talk) 22:05, 13 September 2008 (UTC)

I really think "pepper steak" is understood by default--at least in the United States--to mean the Asian-inspired dish with thinly sliced green peppers and beef; as the article states this dish became famous after it was introduced in the mid-20th century. The slab of steak with cracked black pepper is often called "black pepper steak" or "steak au poivre." We already have the disambiguation at the top. Maybe we could consider more sources. If "pepper steak" is understood by default to be the Asian-inspired dish wouldn't that be too region specific a name? I know that in California, the western steak au poivre was known by many and "pepper steak" and many in Canada often use it in this manner too. I don't know too many Americans who call this steak au poivre nor say black pepper steak, however I will not pursue this name change lest someone else sees a problem with this too. I was just speaking from my experience, and I guess yours is different. I suppose "Pepper steak" could be made a disambiguation, but we already have one at the top leading to the French name (which might be the original name for this dish, if it originated in France, and not England, the U.S., or some other English-speaking nation). Fujian?

What is the evidence that this dish originated in Fujian cuisine? If the "original" used pork rather than beef is it even the same dish? And how did a Fujian dish end up in Japanese Chinese cuisine? Badagnani (talk) 03:55, 13 October 2008 (UTC)

Not sure what evidence there is though the light seasoning for it may link it to the region's style. Is it the same dish? No, probably not, but when the dish went to Japan the meat was changed, the seasoning changed when the dish came to NAmerica. The Fujian dish can perhaps be view as a the source of these derivatives. As for how this became a Ja.Ch. dish I also don't know, but I'm willing to bet it got there just like many other Chinese food items. As well, the dish may have been transmitted back through Imperial Ja.'s war and occupation of Chinese regions in the early 1900's, after all according to the video this is one of the renowned Fujian dishes.
