Creation of this article based on the translation of the latest, cleaned version of the French wikipedia source. The guy runs pastries and/or restaurants in France, the US, Japan, the NYT and various international media talk about him, he's recognized by his peers internationally, I think he qualifies for an english page.

In second paragraph of "Rise" the second ref is mixed up. The cited quote is actually found here in NYT article "Turning Baking Into Cooking" by AMANDA HESSER Published: August 30, 2000.
