Scorzonera roots are used as a cheap replacement for asparagus or for their own sake in Germany for instance, and are called "Schwarzwurzeln" ("black roots") there. They're regarded as a staple vegetable there. Scorzonera root has a mildly sour taste and a firm texture. They're white as asparagus inside when the black skin is removed. The roots are often sold in cans (skinned). I've just eaten some! I think that in other countries like France or Italy, the roots are eaten as well. 91.49.126.50 (talk) 18:41, 8 October 2008 (UTC)
