I think it's enough to acknowledge the alternate style in the lead sentence, then conform to how Wikipedia render neither GR nor the second law of thermodynamics (also a specific, definite theory) as proper names.
In this context, the proper form strikes me as an affectation, and as Wikipedia has no claim to establish common usage (indeed, the arrow of causation flows exactly the other direction), I think our own internal consistency should hold sway :-)
