I think this is a very noteworthy subject and well worth a page. UCP were a very unusual thing - a meat processing company with a specialty in tripe and offal who ran a chain of restaurants in the North west of England. What is considered odd and socially significant is that that they began as processors of basically meat waste - food fit only for the poorest of the poor. But the sudden appearance of textile mills and the consequent increase in employment and wages made formerly very poor people able to, at least occasionally, afford restaurant meals, but retaining their appreciation of cheap meats. This resulted in an entirely unique restaurant culture which lasted until the 1970s.
