Cantine Due Palme is a cooperative company founded in 1989 in Cellino San Marco (province of Brindisi) from the idea of Angelo Maci. He represent the third generation of vintners’family. At the moment the company counts 1200 members and 2400 hectares of vineyards located in the land triangle embracing the provinces of Brindisi, Taranto and Lecce. Among the cellars that have been incorporated into Due Palme group since 1989 there are: the historic Riforma Fondiaria di Cellino San Marco (one of the oldest cooperatives in Puglia formed in 1995), the Angelini winery of San Pietro Vernotico (founded in 1961), the San Gaetano of Lizzano winery (1959) in the province of Taranto, an important wine company in the area of Primitivo DOP, and the cellar of Arnesano (2015) as last incorporation. Cellino San Marco remains the seat of the main cellar (extending over an area of 45 thousand square meters), mother of all post-harvest production ranging from vinification to refinement and finally bottling of wine. It is a vineyard avant-garde center, featuring five grape drains, three soft presses, five pig-smashers, three refrigerating units, and a high-tech analysis laboratory. In addition, the structure has a storage capacity of 250 thousand hectoliters per year, plus 150 thousand hectoliters stored in the complexes of the former Cellino San Marco land reform cellar and another 50 thousand in the San Gaetano cellar of Lizzano. In March 2013 Cantine Due Palme inaugurates a new bottling plant capable of producing 11,000 pieces per hour; by January 2018, the current monoblock will be replaced with a new isobaric structure that will have a flow rate of 15,000 bottles per hour for still wines, and 7,000 bottles per hour for sparkling wines. The barrel room remains the flagship of the productive sector: here the company proceeds with the refinement of the finest wines, stored in barrels of fine French and American Woods, for a total capacity of 10 thousand hectolitres of wine. The structure consists of an area of 4400 square metres divided in two areas, one of 800 squared meters, called Selvarossa room, and the other dislocated on 3600 square metres with a great barrel room. Cantine Due Palme is investing about the program that protects and safeguard traditional cultivation system of the Alberello Pugliese, which goes from breeding to management of the vineyard. To bring energy to this project, in 2010 the president created “Accademia of Alberello Pugliese” promoted by the Provincial Administration of Lecce and by the seven majors of neighborings cities. Success of Cantine Due Palme coming from respect of tradition, because they respect ambient and them roots thinking about a sustainability production and development, exactly they received in 2011 “CSQA” certification, that guarantee a production lacking of insecticide. The innovative system of sexual confusion fight against Tignoletta (a kind of grapes parasitic) without chemical products. Lots of investments were made to guarantee the best manage of vineyards to receive the best product ever. Into 2400 hectares are cultivated 80% of red grape variety, and 20% of white grape variety , with a year medium production of about 300.000 quintal. In the heart of Salento Due Palme cultivates indigenous grapes: Negroamaro, Primitivo, Susumaniello, Aleatico, Fiano, Malvasia Nera and Moscato; otherwise they cultivates Sangiovese, Falanghina, Montepulciano, Aglianico, Vermentino, Cabernet Sauvignon, Merlot, Syrah, Pinot Bianco, Pinot Nero, Chardonnay, Sauvignon.
