Ava's Sticky Rice

Ava's Sticky Rice is my own spin on chicken and parmesean risotto. This dish quickly became a favorite of Ava, and thus she named it Ava's Sticky Rice.

Ingredients: 1 shallot 2 cup arborio rice 2 grilled chicken breasts cubed 1 cup grated parmesean cheese 2 tbsp of butter 4 cup chikcen broth 1/2 tsp salt 1/2 tsp ground white pepper

Saute' shallots in butter over medium heat until translucent. Add rice and two cups of broth and bring to a simmer. Add broth 1/2 cup at a time as it is absorbed by rice (stirring frequently). After all broth is absorbed, add cubed grilled chicken breasts and parmesean cheese. Stir and serve.
