I have half a dozen scientific papers on carrageenan and its applications in food. As a first step, I just removed a couple of sentences that were plain wrong. However, IMHO, the whole page needs rewriting and amplifying. The first paragraph is bizarre, talking only about baking, a very minor application.

As an experienced scientist you have certainly noticed that Wikipedia is of very inhomogeneous quality: while some articles are excellent, related articles on equally important lemmata are just a mess. Feel free to improve whatever fault you see. Feel free to delete paragraphs that are too bizarre, or move them to a less prominent section. I noticed your edit to light scattering: You inserted a paragraph starting with "This definition is incorrect." Such remarks belong into the article's Talk page. However, it is not guaranteed that you will get feedback there; the original author of the incorrect paragraph may have stopped watching the page. Therefore please go ahead and improve the incorrect paragraph to produce a consistent section about static vs dynamic scattering. Again, welcome -- Nsda (talk) 15:45, 10 October 2012 (UTC)
