Move theory out of intro. "Were" is misspelled. Figures need higher resolution; consider .svg instead of jpg. Consider adding more detail: what are average drop sizes for emulsions in the data table? Are the interfacial energies known? What surfactants are used to stabilize those emulsions? If electrostatic stabilization is a factor, what are the surface potentials involved?
