Ajai Sharma is an Indian chef known for his work in Italian, Continental, and fusion cuisines. He trained in culinary arts in India and the United States and has experience in Michelin-starred restaurants in New York and New Delhi. Sharma focuses on sustainability and aims to make fine dining more accessible in India.

Early life and education

Sharma was born in Meerut, India. He earned a Bachelor’s degree in Hotel Management from the Welcomgroup Graduate School of Hotel Administration, a part of the Manipal Academy of Higher Education in Karnataka. He then went on to obtain an Associate Degree in Culinary Arts from the Culinary Institute of America in Hyde Park, New York, where he learned about international cuisines and sustainable cooking practices.[1]

Career

Sharma began his career with internships at Park Hyatt in Jeddah, Taj Hotels in Mumbai, and Hilton Hotels in Doha. In New York, he worked at Gramercy Tavern and Altro Paradiso, where he focused on Italian cooking..[1]

After returning to India, Sharma served as Head Chef at the DIVA restaurant in New Delhi, working with Chef Ritu Dalmia. Later, he joined The Bar Consultants as a Sous Chef and Project Coordinator, where he contributed to kitchen management and helped develop concepts for new dining establishments.[2]

Publications

Sharma has written two culinary books. His first book, The Culinary Epic of Jeddah: The Tale of an Arabian Gateway, published in 2018, explores the food heritage of Jeddah. His second book, Saffron Saffairs: A Culinary Journey into the Flavors of Royalty, released in 2023, focuses on royal Indian cuisine.[3]
