We should have an article on every pyramid and every nome in Ancient Egypt. I'm sure the rest of us can think of other articles we should have.
Cleanup.
To start with, most of the general history articles badly need attention. And I'm told that at least some of the dynasty articles need work. Any other candidates?
Standardize the Chronology.
A boring task, but the benefit of doing it is that you can set the dates !(e.g., why say Khufu lived 2589-2566? As long as you keep the length of his reign correct, or cite a respected source, you can date it 2590-2567 or 2585-2563)
Stub sorting
Anyone? I consider this probably the most unimportant of tasks on Wikipedia, but if you believe it needs to be done . . .
Data sorting.
This is a project I'd like to take on some day, & could be applied to more of Wikipedia than just Ancient Egypt. Take one of the standard authorities of history or culture -- Herotodus, the Elder Pliny, the writings of Breasted or Kenneth Kitchen, & see if you can't smoothly merge quotations or information into relevant articles. Probably a good exercise for someone who owns one of those impressive texts, yet can't get access to a research library.

The following coordinate fixes are needed for KV58 (burial site in Valley of the Kings).
KV58 Article includes this description of the location:
"The tomb was discovered on 10 January 1909 and is located between the tomb of Horemheb (KV57) and the "Gold Tomb" (KV56)."
Which means it should be between KV57 and KV56:
KV57: 25° 44′ 23.6″ N, 32° 36′ 2.6″ E (25.739889, 32.600722) 36R 459953 2846939
KV56: 25° 44′ 24.2″ N, 32° 36′ 3.9″ E (25.740056, 32.601083) 36R 459990 2846958
(about 40 meters apart)
But KV58 coordinates show this location some 1.3 km east of where it should be.
KV58: 25° 44′ 23.8″ N, 32° 36′ 51.5″ E (25.739944, 32.614306) 36R 461316 2846941
I suspect the real coordinates should be closer to:
25° 44′ 23.8″ N, 32° 36′ 3.0″ E (25.73994386, 32.60084081) 36 R 459965 2846945
This site doesn't appear to have been surveyed in the Thebes Mapping Project.
Google Maps has a marker for KV58 at 25° 44′ 23.8″ N 32° 36′ 3.6″ E, which is indeed between KV57 and KV56, so I've changed the coordinates in the article to match those. It's curious that the coordinates that were in the article were correct save for the seconds of longitude, but I don't see any way that "51.5" could have been a typo for anything close to "03".
