I didn't actually create the original page: there was one of those pointless stubs "Derby Black Friary was a monastery in Derby", that I expanded; so the name stayed the same as when I found it.
I do agree though, calling Derby Black Friary suggests there was also grey or white friary in the town; and I can find no record of either (there are other priories but not friaries). But there is no right answer to the naming as all of the sources list different names. Some call it a Friary (it had friars so that is correct); some call it a Priory (it was headed by a prior so that is also correct); some call it a monastery - also correct. Derby Friary, Derby Black Friary, Derby Blackfriars, Derby Dominican Priory, Derby Dominican Friary, Derby Dominican Monastery, The Priory of the Friar Preachers of Derby, The Priory of The Annunciation of Our Lady, Derby, etc. etc. etc. etc. etc.
The only name that is replicated in more than one place is Derby Blackfriars. One of those places is in the English Heritage Register: http://www.pastscape.org.uk/hob.aspx?hob_id=313371
That is prone to naming errors as well (it is very London-centric and most of the sites they haven't physically inspected (or properly researched)).
So yeah, there's going to be no "right" answer. I'm going to change it to DERBY BLACKFRIARS seeing as that is what English Heritage is batting about.

editI noticed that you've established or moved a number of name articles to "[name] ("given name" or "surname")". My understanding of WP:PRECISION is that an article should be titled only as specifically as necessary, so "[name] (name)" would generally suffice and be proper, unless separate articles for given and surname exist and need distinction. - I'm been taking my lead in this from MOS:APO, which envisages separate pages for surnames and given names if there are significant quantities of either (and looking at what other editors are doing in this area, "significant" may be as few as two, although there is apparently room for flexibility). So it's a question of weighing that against WP:PRECISION, and I'm inclined to go with MOS:APO as more specific to the subject area.
